How to incorporate greens with every meal

by - July 23, 2015

Hola Chicas! I have a food confession to make.

I have the hardest time eating my greens. I shy away from salads, I stay away from the greens sides I know I should eat them, I know it's good for me but I just can't get myself to eat them. Thank God That's all in the past now. I have figured out fun ways to incorporate greens with my meal and even get my kids to eat their greens too.
See two year ago my kids and I got back our doctor's report and we all had low irons. I already knew the one thing I dislike more than my greens is medicine!
I begin to make an effort to eat more greens, I started with spinach in smoothies and graduate to actually eating them.

Eat a side of Greens with breakfast!

I figure the reason I can take spinach in my smoothies is because the banana and strawberries take over the taste make it like it was there.

Most greens have a mild taste that can be over power by more tasty spices you would enjoy eating.

My breakfast ones are sprinkled with light salt and pepper and drizzled with olive oil.

Eat a side of Greens with lunch!

For my lunch one, I still sprinkle salt and pepper but also added some Jerk seasoning, no olive oil this time since I'm just stuffing these in a sandwich!

Eat a side of Greens with Dinner!

When you have a side of fried chicken anything else taste good I say no extra spices required for this one.

Switch off your greens! Spinach is not the only one. I experience with Spinach, Collards, Swiss Chards, and my fave of all Arugula!

You can mix it all up and add your favorite spices.

How do you take your greens?

  1. My kids love spinach, as long as it's wilted or cooked. We use it in savory omelets for dinner (with Feta cheese), I throw it in at the end of pasta cooking, and we always put it on pizza. There's a dish we like that's a whole bed of spinach with chicken breasts on top, with fresh tomatoes, mozzarella and homemade balsamic viniagrette. It bakes up deliciously!
